I recently met a wonderful woman in Encinitas, California who is making gut-friendly, digestible sourdough bread. It is the most delicious bread I have ever had and I definitely feel guilt free when eating it. My favorite is to put it in the oven to get it hot, then chop it up with a knife, drizzle with good olive oil, sprinkle with course salt, and toasted herbs, top it off with fresh parmesan and zest of a lemon.
